VEGAN TRINXAT – 3 VERSIONS

Vegan Trinxat : 3 versions (Kimchi, miso aubergine and shiitake)

A Catalan in Japan. The tastiest love story ever told! 

Trinxat (horribly translated to Japanese as トリンチャト by me) is a traditional Catalan dish made from potatoes and cabbage. The name means “sliced” or “chopped”. Quite similar to the British dish called bubble and squeak.

In this recipe I made 3 different versions of vegan trinxat. After eating them with my friends we couldn’t decide which one was the best. I’m a huge fan of kimchi (fermented nappa cabbage with korean chilli flakes) but be careful, kimchi sold in stores is not vegan, the good news is that you can make it easily at home. 

Be creative and mix it with any ingredients you like.

Ingredients:

  • ⅛ cabbage 
  • 6 small potatoes
  • salt
  • rice flour (or any other flour)
  • vegetable oil 

 

Trinxat with kimchi:

  • Vegan kimchi

 

Trinxat with Aubergine 

  • 1 aubergine
  • 1 Tbsp Miso
  • 2 Tbsp Soy sauce
  • 1 Tbsp sugar
  • Paprika

 

Trinxat with Shiitake

  • Shiitake
  • garlic
  • salt and pepper

 

-How to Cook-

  1. Peel and cut the potatoes and the cabbage. Remove the stems from the cabbage so it is going to be easier to smash it later on. Boil in water with salt until tender.
    1. Aubergine version: 
      • Mix miso, soy sauce (you can use gluten-free soy sauce) and sugar. 
      • Slice thinly the aubergine and coat each slice with the mix. 
      • Put some vegetable oil in a pan and fry, on medium heat, for 30 seconds each side. Sprinkle with some paprika.
    2. Mushroom version:
      • Chop the shiitake (or any mushroom of your liking) and the garlic. 
      • Put some vegetable oil in a pan and stir for 3 minutes or until cooked. 
    3. Kimchi version:

  2. Rinse the potato and cabbage and smash. 
  3. Mix and make patties with the different ingredients (aubergine, shiitake or kimchi). Coat with rice flour. You can also use all purpose flour. 
  4. Put some vegetable oil in a pan and fry, on medium heat, for approximately 5 minutes each side. いただきます!
